how long should I smoke a 4lb pork butt using a stove top smoker
I recently bought a stove top smoker and smoked a brisket for 2 hours using mesquite chips the smokey flavor was there but no smoke ring I finished the brisket in the oven till it was tender enough aprox 2 hours more anyone used to working with this piece of equipment?
A typical rule of thumb for pork butt is 1 - 1.5 hours per pound at 250 F cooking temperature. The true test is internal temperature, however. Depending on what you want to do will determine the best temperature. For pullable pork, internal temperature should be 190-200 F. For sliceable pork, 175-185 should be the target temperature.
Once the pork comes up to temperature, remove it from the heat, wrap it in foil, then place in an insulated cooler for 30 minutes up to 2-3 hours.
Prepare as necessary, and eat! For pulled pork sandwiches, I like a hamburger bun, a mound of pork, a scoop of coleslaw and HMV sauce (Honey-Mustard-Vinegar in equal parts).
