how do u cook your chicken in the smoker and not have tough skin or meat?
I was wondering every time I have cooked my chicken in the oven or on the grill the meat and the skin on the chicken is tough is there any tricks or tips that u could tell me that would help for when I put my chicken in the smoker to cook it?
Brine your chicken in a salt and sugar solution for up to 12 hours before cooking in any method. Remove from the brine and pat dry. Rub skin with olive oil and season with salt and pepper and roast or grill until internal temperature is 180 degrees. Remove from oven and let rest covered (meat will continue to cook while resting. If your chicken is tough you may be cooking it at too high a temperature. With a smoker, it will be better with a rub before smoking. Every smoker is different so read the manufacturer's directions. Smoking takes longer and adds a totally different flavor to the poultry. I also always brine chicken before smoking.
