what is the best bbq used for smoking meat?
i am after buying a new bbq as mine is dying a slow death and dont think it will survive the winter, i do alot of smoking on my bbq but i feel im a better cook than i was when i first started bbqing, which led to me smoking food and maybe even opening my own bbq resuatrant later in life. i just need help choosing the right grill for my back garden atm which will be me cooking for freinds and family almost on a weekly basis, any input would be great
With the gas type, you can do it quite well, I have at times, you just place the meat or poultry on one side and light or put the smoke box on the other side, this is known as indirect cooking /smoking, if your going to cook and smoke the meat you would use the lowest setting, and may have to add more chips/sawdust to strengthen the mount of smoke added, in the UK and outdoor propane based BBQ is fine, you can use charcoal ones but there a bit unpredictable, choose one that is sturdy and big enough for what your looking to do, my mate in Liverpool does his at home on his grill, and take it to the bistro for service, his smokes, belly pork, pork ribs and beef for different items on the menu, I got him to brine and smoke a turkey, he has done pheasants and grouse too.
You can make up packet of Smoking Chips/sawdust in foil pouches and poke hole in them and place on the hot side, just make sure to check the meats with a reliable meat thermometer for safety.
