How can I regulate the temperature of a barbeque/smoker?
Well, I have been focusing on barbeque/smoking lately. Everything I have read so far makes clear the importance of temperature but does not tell how to regulate/check it. How can I do this? I mean, if I'm burning wood or charcoal, and it goes up to 350 degrees, how do I bring it down to 250? How would I keep it there? What do I do if I need to raise the temperature? How do I make sure the temperature stays where it needs to be? Of course I need a thermometer, but a thermometer only gives you the temp, it does not help in maintaining it....

That's why barbeque is an art. It takes practice.
Get a $4 oven thermometer and place it inside the griller. It will get covered in smoke, but that's ok. You can clean it off. The thermometer on the grill is useless. Ignore it.
Heat the wood and let it cook down to embers. Check the temp. and see about how much wood is needed to keep it at that temp. If the temp drops, add more wood. Have pieces of different sizes on hand, if possible.
I've been working on my bbq skills too. It was confusing at first, but it's easier now. I even baked a loaf of bread in the chargriller, a pizza in the fireplace and made homemade ham!
