Help me make my ribs perfect!?
I have the best damn rib recipe you'll ever taste, last summer I smoked countless racks of ribs to get them to this point. I only have one problem, tenderness. I can get them tender, but not fall off the bone, last racks I made with perfect taste were kind of dry. Any one out there know there way around a smoker, not just giving me info they ggot of another website I probably read already.
I brine them, and smoke them, I've used baby back, but I'm switching over to st. louis this summer. They are much friendlier to work with. I think I have tried cooking longer and shorter, I tried more salt in brine, I'm lost. Is there a point were the ribs are done, but need to go hours more to become tender? I've tried that and didn't help much.
Put them in a large pot and fill with water to cover ribs. Boil them for about an hour or longer until they are fork tender. Never fails!!! THEN grill them, bake them...whatever you want.
